Water Quality Requirements for Food Preparation in South Australia

The water quality requirements for food preparation in South Australia must meet potable drinking water standards. This requirement is enforced by the following legislation: Safe Drinking Water Act 2011, Safe Drinking Water Regulations 2012 & Food Act 2001. These laws apply to any commercial or public food business, including restaurants, wineries, cafes, catering, child care, aged care and hospitality venues.

SA Water mains is an approved water source for food use because it meets Australian Drinking Water Guidelines. Rainwater tanks are not approved unless they are proven potable, tested regularly and registered with SA Health and comply with Safe Drinking Water Act. Bore water is not approved unless proven potable, tested regularly for chemicals & bacteria, registered and has risk management. Carted water is not approved unless proven potable and the provider is registered with SA Health.

Water used for the following food related purposes must be of potable quality: Food preparation & cooking – Washing fruits, vegetables and other ingredients – Making ice – Cleaning food contact surfaces – Handwashing in food service areas.
